Proprietary oil blend solves two problems for professional kitchens: burn point and release

Avocado oil has surged in popularity in retail, but professional kitchens have been slower to adopt it. The reason is practical: pure avocado oil in a standard spray format burns unevenly under high heat and releases inconsistently from cooking surfaces, creating the exact problems operators are trying to avoid. Bag-on-valve delivery systems, common in retail avocado oil sprays, compound the issue by losing pressure and spray consistency as the can empties. For a line cook running hundreds of covers, that variability is not acceptable.
PLZ Corp’s formulation team developed a proprietary blend that addresses both issues directly. By combining pure avocado oil with sunflower oil and sunflower lecithin as a release agent, the new Vegalene spray extends the effective burn point for high-heat commercial applications and delivers the pan release performance operators depend on. Delivered in a traditional aerosol format rather than bag-on-valve, the spray maintains consistent coverage and pressure from the first use to the last drop in the can.
“Every operator we talked to said the same thing: avocado oil looks great on a menu and causes problems on the line,” said Fenton Challgren, CEO of PLZ Corp. “The burn point and the release were two things that needed solving for a commercial kitchen environment. Our formulation team went after both. What came out of St. Clair is a product that finally gives operators the clean label and the performance at the same time.”
The product carries a 500 degrees Fahrenheit smoke point, making it suitable for grilling, roasting, sautéing, baking, and air frying across the full range of commercial kitchen applications. It is Non-GMO Project Verified, allergen-free, and zero calories. The fine mist spray delivers even coverage with less pooling and fewer hot spots. Compared to bag-on-valve avocado oil systems, the traditional aerosol format also reduces product waste through more complete can evacuation.
“Commercial kitchens don’t have patience for a product that performs differently at the end of the can than it did at the beginning,” said Tim Cash, VP and General Operations Manager for Food Service at PLZ. “We built this specifically for the way operators actually work, at high heat and high volume. The launch comes as the avocado oil spray market is expanding rapidly. The global market was valued at $363.7 million in 2025 and is projected to grow at a 7.6 percent compound annual rate through 2033, with food service operators identified as one of the fastest-growing segments. Operators are under increasing pressure from diners who expect cleaner, premium ingredients without compromising the speed and consistency that high-volume kitchens require.
